News from the kitchen. Inspired by our World Food Tour, tomorrow we're attempting an authentic Vietnamese chicken dish for all our children, helped by some of our parents. Lightly spiced chicken breast (none for the vegetarian option) & butternut squash with hints of ginger, garlic and coriander, seasoned with soy sauce. This dish is packed full of vegetables too, including carrot, onion, green beans, leeks & corn all served on a bed of basmati rice. The children garnish with finely chopped fresh coriander.......delicious!
